Brrrr…..it’s cold even in SC! Cold weather = hot chocolate and hot soup (not necessarily together). A few years ago, my cousin shared this delicious Santa Fe Soup recipe with me. I’m going to gift the recipe to you. Try it with a pimento cheese or turkey sandwich. I don’t think you will be disappointed.
Santa Fe Soup Recipe
3 cans of shoe peg corn
1 can black beans
1 can kidney beans
1 can pinto beans
1 can tomatoes with chilies or Rotel with diced tomatoes & chilies
1 large can chopped or diced tomatoes
½ chopped onion
2 lbs ground beef or ground turkey
2 pkgs Taco seasoning mix
1 pkg Hidden Valley Ranch Dressing mix
2 cups water
Place first 6 ingredients in large crock pot or dutch oven. Add dry taco seasoning and ranch dressing mixes and water. Mix well. Cook ground beef/turkey with onions together. Drain well. Add to crock-pot or dutch oven. Simmer until heated thoroughly. Top soup with sour cream or shredded cheese.
